Currently making Gumbo. First started with a dark chocolate roux, which I use Unsalted Butter as the fat. Then I start adding Stock. Trinity and Onions are diced and sweated down and added. Andouie and Chicken are added. Season it with salt, pepper, Tony Chacherie, and some Crystal. Adding a bit of beer in a little while. Will post a Pic in a bit. NO INSTAPOT.
